Healthy Chicken Stir-fry With Noodles

So i thought i would share some recipes with you that are healthy for the diet conscious person reading my blog! the best bit they are super yummy

Preparation - 20 minutes
Cooking time - 20 minutes
Serves 4


You need

2tbsp Vegetable Oil
2 Garlic Cloves, Crushed
4 Boneless, skinless chicken breasts, each sliced into 10 pieces
3 Medium carrots about 450g cut into thin strips, 5cm long
250g pack of thick egg noodles
1 bunch of spring onions sliced
200g mangetouts
155g jar sweet chili and lemongrass sauce

How to

  1. Cook noodles in boling water - according to the packet instructions.
  2. Heat oil in a Wok or frying pan, add garlic and stir fry for 1-2 minutes. Add the chicken pieces and stir fry for 5 minutes. Add carrot strips and stir fry for a further 5 minutes.
  3. dd spring onions, mangetouts and sauce to the wok and stir fry for 5 minutes.
  4. Drain the cooked noodles and add to wok.
  5. Toss together and serve.

Per serving

355 calories
10g of fat ( of which 2g saturates)
29g carbohydrates
0.5g Salt

Dairy Free

This is super tasty and really easy to prepar!
